How to Make Mini Peppermint Bundt Cakes Step by Step!
In as little as 35 minutes, you’ll have six individual bundt cakes to share with family and friends. You’re about to be the baking hero of Christmas dinner!
EASY Chocolate Peppermint Mini Bundt Cakes
PREP TIME: 15 minutes
COOK TIME: 20 minutes
SERVINGS: 6 bundt cakes
1⁄2 cup unsalted softened butter
1 cup granulated sugar
1⁄2 cup unsweetened cocoa powder
3⁄4 teaspoon baking soda
1⁄4 teaspoon salt
1 egg
1⁄2 teaspoon vanilla extract
1 cup all-purpose flour
3⁄4 cup milk
FROSTING INGREDIENTS:
1⁄2 cup heavy whipping cream
1/3 cup powdered sugar
1⁄2 teaspoon peppermint extract
Crushed peppermint candies
Other Tools Needed:
Wax Paper
Ziploc Bag
Non-stick spray
How to Make Peppermint Mini Bundt Cakes
STEP ONE: Preheat the oven
Preheat the oven to 375 degrees F. Spray a Non stick Mini Bundt Pan with nonstick spray. Be sure to hit every nook and cranny with the spray. The most common problem with bundt cakes is that they sometimes stick to the pan (even non-stick pans).
STEP TWO: Mix the ingredients
Mix the butter and sugar with a whisk until light and fluffy. Add the cocoa powder, salt, baking soda, egg, flour, vanilla, and milk. Mix until completely incorporated.
STEP THREE: Pour the batter into the bundt cake pan
Fill each bundt cavity 2/3 full with the chocolate batter. Place in the center of the oven for 20 minutes at 375 degrees F. To test that the bundt cake is done baking, insert a clean toothpick into the thickest part of baked bundt cake. If the toothpick comes out clean, the bake is finished and is ready to cool. Allow to cool completely and move each cake to a cooling rack with a sheet of wax paper under neath it.
STEP FOUR: Make the frosting
Whisk the heavy whipping cream, powdered sugar, and peppermint extract until mixed well. It should be thick and not runny. We want it to stay on the cakes and not drip off completely.
Place peppermint candies into a ziploc bag. Place bag on a hard surface and hit the candies with the flat side of a Meat tenderizer until crushed.
STEP FIVE: Add the frosting
Using a spoon, drizzle the frosting back and forth across the top of each baked bundt cake, and then sprinkle the crushed peppermint candy on top of the frosting before it dries. If the frosting is too runny add more powdered sugar to it. Don’t add the frosting to the cake until it has cooled complexly.
