This blue raspberry lemonade cupcake recipe is really EASY because it uses boxed cake mix with some enhancements to get that made from scratch, homemade flavor. The cupcake itself is blue raspberry flavor and the frosting is lemonade flavored. This cupcake gets it’s tell tale blue raspberry flavoring from a secret ingredient- blue raspberry Jello!
You don’t have to worry about having lots of fresh ingredients like fresh raspberries, lemon zest, lemon juice etc. We used shelf stable items with natural flavoring. These red, white and blue cupcakes are perfect for Memorial day, 4th of July, Labor day or summer bar-b-ques and picnics.
You can easily swap our some of the flavor ingredients for other flavors to experiment with your own combinations. Maybe you want raspberry frosting instead of lemonade frosting OR vanilla cupcakes instead of raspberry cupcakes.
You can get creative and use things like lemon zest, lemon juice, raspberry puree, raspberry jam filling or fresh raspberries in place of our flavor ingredients for fresh, totally natural flavored cupcake.

Blue Raspberry Lemonade Cupcake Recipe
Raspberry Cupcake Ingredients (makes 2 dozen cupcakes):
- 1 15.25-ounce boxed white cake mix
- 1 ¼ cups water
- 1/4 cup vegetable oil
- 1/2 cup mayonnaise
- 4 egg whites
- 1-2 teaspoons of blue raspberry Jello
- 1/2 teaspoon vanilla extract
- Blue raspberry natural flavoring
- Red White & Blue cupcake liners (use plain white if you want the cupcake colors to be seen)
- 1 large mixing bowl and 2 medium bowls.
Lemonade Frosting Ingredients:
- 1 1/2 sticks salted butter, softened
- 1 teaspoon vanilla extract
- 3-4 cups powdered sugar
- 3 tablespoons heavy cream
- Lemonade natural flavoring
- Blue and red gel food coloring
- Red White & Blue sprinkles
- 3 medium bowls
- 1 large piping bag, 1 large star frosting tip
- 1 tall glass or wide mouth mason jar
Kitchen Tools:
- Flat scraping rubber spatula
- Stand or hand mixer
- Standard size cupcake pan
How to Make Raspberry Lemonade Cupcakes
Gather up all the ingredients for these super fun blue raspberry lemonade cupcakes! First, line a standard cupcake pan with Red White & Blue cupcake liners & preheat your oven to 350 degrees. Grab the boxed cake mix and pour it into a large mixing bowl. Using a powered hand or stand mixer, add the wet ingredients- water, oil, and egg whites, vanilla extra and mayonnaise. Mix on low speed and increase to medium speed until all ingredients are combined and there are no lumps.
Equally divide the cupcake batter evenly between 3 mixing bowls. Grab the red and blue gel food coloring and your blue raspberry Jello for the next step.
Add the red gel food coloring to one bowl and mix till you get a bright red. Add the blue gel food coloring and blue raspberry Jello to the 2nd bowl. Leave the and leave the last bowl plain white.
Using an ice cream scoop or cookie dough scoop, drop in blue batter, then white batter and finally red batter to your lined cupcake pan until each cup is about 2/3 full.
Bake at 350 degrees for 18-20 minutes, or until a toothpick comes out clean from the center of the cupcake. Allow cooling in the cupcake pan and move to a wire rack when cool enough to handle. Make sure cupcakes have completely cooled before frosting or your frosting will melt right off the cupcake! Store any unfrosted cupcakes in an airtight container at room temperature until ready to frost.
How to Make Lemonade Frosting:
In a large mixing bowl, using an electric mixer on medium speed, cream the softened butter for 2 minutes until light and fluffy.
To the creamed butter add the vanilla extract and lemonade natural flavoring . The lemonade flavoring is highly concentrated! So start with 1 or two drops at a time and test the flavor before adding more. A little goes a long way with this flavoring!
Slowly add the powdered sugar to the creamed butter mixture 1 cup at a time until fully combined. Add the heavy cream and mix again until stiff peaks form in the bowl.
Divide the lemonade frosting equally into 3 bowls. Add the blue gel food coloring to one bowl and the red gel food to the other. Leave the 3rd bowl without food coloring.
Place your large piping bag with a star tip into a large glass or wide mouth mason jar. Fold the piping bag over the sides exposing the inside of the bag. Using a frosting knife, alternate red and blue dollops of icing on the sides of the bag.
Carefully fill the inside of the piping bag with the plain white frosting until completely full. Before you begin frosting your cupcakes, squeeze a small portion onto a plate until you see all colors piping out simultaneously.

Frost each cupcake with a swirl that starts from the center of the cupcake and works outward. Generously decorate the top of the cupcake with Red White & Blue sprinkles and store in an airtight container until your patriotic party begins!
