BLUEBERRY CREAM CHEESE MUFFINS WITH CRUMB TOPPING RECIPE
Preparation Time: 20 mins
Bake Time: 25 mins
Streusel Crumb Topping Ingredients:
2/3 c Flour
1/3 c Brown Sugar
¼ tsp Salt
½ c Butter
Blueberry Muffin Batter Ingredients:
1 c Flour
¼ tsp Salt
1 tsp Baking Powder
¼ c Vegetable Oil
½ c Sugar
1 Egg
½ tsp Madagascar Vanilla
½ c Greek Yogurt (plain)
1½ c Blueberries
Cream Cheese Filling Ingredients:
150 g Cream Cheese
3 tbsp Sugar
1 tsp Madagascar Vanilla
1 tsp Corn Starch
Glaze Drizzle Topping Ingredients:
½ cup Powdered Sugar
1-2 tsp Milk

Blueberry Cream Cheese Muffins Instructions
Gather all ingredients for your blueberry muffins!
Combine all the ingredients for the crumb streusel and cut into crumbs with a pastry cutter or fork.
For the muffin batter, combine all dry ingredients with a whisk.
All mixing for the muffin batter should be done by hand. Using a stand mixer can over work the batter and cause muffins to be dry or dense. Combine all of the wet ingredients for the muffin batter and combine well with a whisk. Slowly add the dry ingredients to the wet ingredients and mix well by hand.
In another bowl combine all elements of the cream cheese filling and mix until combined. Prepare a muffin tin with paper muffin lines. Pour 2/3 of the muffin batter into the pan. Drop some cream cheese filling and a few blueberries on top of each 2/3 filled muffin cup. Pour last 1/3 of bater on top of filling and blueberries. Sprinkle with crumb streusel and add a few blueberries on top. Bake in the oven at 375 degrees for 25 minutes.
While your muffins are in the oven, combine all ingredients for the glaze and whisk together until combined.
Allow your muffins to cool down. Carefully move them to a cooling rack when possible so the bottoms of the muffins won’t get soggy.
