EASY Peppermint Bark Cookies
Prep Time: 15 minutes
Makes: 18 Cookies
INGREDIENTS:
1 box chocolate cake mix
2 eggs
1/2 cup vegetable oil
12 oz. white chocolate chips
4-5 full size candy canes, crushed
Parchment Paper

How to Make Peppermint Bark Cookies Step by Step!

1. Combine the Ingredients
Preheat your oven to 350 degrees Fahrenheit. Line a large baking sheet with parchment paper, and set aside. In a large mixing bowl, fold together the cake mix, eggs, and oil.
PLEASE NOTE! The dough should be sticky and hold its shape before baking. If not, add a splash of water and fold the ingredients until everything is well combined. This will help the cookies spread more like normal cookies during the baking process.

2. Scoop the Dough
Use a 1 1/2 inch cookie scoop to scoop the dough onto the prepared baking sheet. Bake in your preheated 350 oven 9-11 minutes.

3. Move to a Cooling Rack
Move your cookies to a cooling rack and allow to cool completely. Grab another sheet of parchment paper and lay it out flat on the counter in preparation for dipping the cookies into the white chocolate. While you’re waiting for the cookies to cool you can place the candy canes in a ziploc bag and crush them with a meat tenderizing hammer (or anything hard you have around the house).

4. Melt the White Chocolate
Add the white chocolate chips to a microwave safe bowl. Heat the chips in 30 second bursts (stirring well between) until all the white chocolate chips have melted.

5. Dip the Chocolate Cookies
Dip each cookie half way into the melted white chocolate, and sprinkle with crushed candy canes before the chocolate sets. If you want to add sprinkles or anything else…do it now before the chocolate sets. Place the dipped cookies on the prepared parchment sheet to fully set.
