INGREDIENTS:
1 cup unsalted butter, divided
2/3 cup brown sugar
1/3 cup granulated sugar
2 eggs
2 1/2 tsp vanilla extract
2 cups all purpose flour
1 tsp salt
3/4 tsp baking soda
1 cup semi sweet chocolate chips
2 cups powdered sugar
Green, orange, and purple gel food coloring
Halloween sprinkles, eye candy sprinkles in various sizes

How to Make A Halloween Cookie Cake Step by Step!

Let’s start by making the cookie dough for our cookie cake.
Preheat your oven to 350 degrees Fahrenheit, and spray a springform pan with non-stick spray.
In a large mixing bowl, whisk together the all purpose flour, salt, and baking soda and set aside.
In another bowl, beat 1/2 cup butter, brown sugar, and granulated sugar together until creamy and fluffy.
Add the eggs and vanilla to this mixture and combine well. Slowly fold in the flour mixture, mixing until just combined. Don’t overbeat the batter!

Fold in the chocolate chips with a silicone spatula if you have one.
Spread the cookie dough evenly around the bottom of your prepared springform pan.
Bake for 23-25 minutes or until the top is golden brown. Allow the cookie cake to cool completely before you release springform pan sides.
Now we’ll tackle the frosting.
Mix together 1/2 cup butter and 2 cups powdered sugar.
Slowly add milk (small amounts), mixing until frosting is smooth and you can form peaks. The frosting should be able to hold its shape. If you add too much milk, just add a little more powdered sugar to balance everything out. If you have a favorite icing recipe (or even store bought frosting) you can sub that as well.

Divide the frosting evenly into 3 separate mixing bowls. Add orange gel color to one bowl, green gel to one bowl, and purple gel to one bowl. Mix each bowl until the color is fully incorporated.
Add the frosting to 3 separate piping bags fitted with varying star shaped piping tips.
We made rosettes, stars and lots of swirls. For best results vary the sizes of your flourishes. Add swirls and other visual interest. This is the FUN part so get creative!
Add LOTS of Halloween themed sprinkles and candy eye sprinkles in various sizes for a fun effect that adds a little CRUNCH!
